I’ve also been making and packing a lunch (not as consistently as I’d like) for the past year. This combo has been working for me and it’s 100% vegetarian. Most of these things are hit or miss. For instance, the Hummus, Great balanced diet there, I usually use the “garden vegetable” variety, nut if there’s something different making an appearance (Lemon?) I’ll try it.
I have a hummus sandwich. I like chopped scallion, but thinly sliced radishes will top the sandwich.
I have a container of veggies. This is usually matchstick carrots, small sliced celery and rough chopped radishes. Bell peppers have found there way into this container. Depends what’s available.
Apples for dessert. Sliced and cored. If there’s enough, two apples, in this picture there’s one.
