I made this one last night and had it over the blueberry crumble.. Mmmmm, very nice! You can use this sweetened whipped cream topping for cream pie topping or serve with gingerbread, cobbler, or other desserts.

Making a fruit based sauce is actually very easy.. Simple.. A simple syrup is where you start.
Ingredients:

Mix water and sugar and heat till sugar dissolves.
So you chop whatever fruit you’d like. Add it to the syrup. Heat the syrup mixture till it thickens.

Add strawberries to syrup mixture and heat till it thickens.
Then let cool and use on pancakes or french toast. I’ve used strawberries, blackberries, blueberries and apples to make this and have always got rave reviews..

The basis for an Inari which is a very small pocket filled with rice or other goodies. Aburaage spread with umeboshi paste is delicious!!
Aburaage is basically a deep-fried thin slice of tofu.

Rice over the years was always my favorite starch but making rice for me would either make a charred mass in the bottom of the pot or a soupy mess! I figured out this way of doing it which seems to come out perfectly every time.
- 1 cup Rice (Whatever type you prefer, I use Long Grain Brown Organic for everyday use)
- 2 cups Water
Put the rice and water in a pot and bring to a boil.

- If you’re on a gas range cover and reduce flame to minimum for 45 minutes.
- If you’re on electric range warm up a burner to a little over the minimum setting while you’re boiling the rice on the other. When the rice is boiling, move the pot onto the other burner, cover and leave for 45 minutes.

Here’s a chart of rice varieties and water ratios and cooking times. I haven’t tried all of these but they should give some great starting points.

The foundation of the Pizza is the dough. I wanted chewy more than crunchy. This recipe as is can be stretched ( no pun intended ) to make two pizzas in case of emergency, (somehow my kids can sense from a hundred miles away I’m making it and appear!) but I usually make one thick, chewy yummy pizza!!
- 1 cup warm water
- 1 tsp or 1 packet dry yeast
- 2 tbsp honey or raw sugar
- 4 cups flour
- 2-3 tbsp Olive Oil.
Combine water, yeast and sugar in large bowl and let sit for about 5 minutes.
Slowly add flour about 1/2 cup at a time stirring constantly with a fork till a ball forms. Cover your hands with flour and continue adding flour kneading till it’s all absorbed. Knead another 5-10 minutes and form a ball. Add olive oil to the dough coating the ball completely. Place in bowl and cover with a towel and place in a warm area.
Allow the dough to rise till it’s doubled in volume.
Turn it out onto your board and punch the center till it’s back down to size. Knead around and form a ball and allow to rise again in the middle of an oiled pizza pan. As the dough rises form it into a pizza shape and the dough will rise more making a thick crust. If you want a crisper crust divide the dough in half and for half into a pizza shape but thinner.

This is a very simple recipe which will become the basis for many soups and stocks. I use it for making miso
soup and it can become a noodle broth with some additions.
Ingredients
1 8″ X 8″ sheet of Kombu
1 cup Bonito Flakes
4 cups water
Bring Kombu to a simmer and simmer for 10 minutes. Add Bonito Flakes and cook an additional 2 minutes.
Strain.
Makes about 3 1/2 cups.
