Taste of Late Summer: Blueberry Crumble – Chef’s Blade

I made this one last Saturday night, but I only used 1 cup of blueberries and half the other ingredients. It was absolutely wonderful! Just wish I had some vanilla ice cream to go with!!

Ingredients

  • 6 c blueberries (or any summer fruit, cut finely)
  • ¾ c flour plus 1 tbsp
  • ½ c packed brown sugar
  • ¼ c granulated white sugar
  • 4 tbsp butter, cold, chopped into small pieces.
  • 1 tsp cinnamon

Recipe

Step 1: Preheat the oven to 350.
Step 2: Wash and thoroughly dry the blueberries, then toss with 1 tbsp flour and ¼ c white sugar. Transfer to a pie pan.
Step 3: In a medium sized bowl, mix the flour, brown sugar and cinnamon. Add the butter with your fingers until small crumbles form throughout.
Step 4: Distribute the mixture evenly on top of the blueberries, starting at the center. I like to leave a little room on the edges for the blueberries to poke through.
Step 5: Bake for 30-35 minutes, or until the top is quite brown and the blueberries have bubbled.

It didn’t make a lot, but just enough for Coreen and I to have for dessert!
