Walnuts! I love walnuts and toss them into lots of things, especially salads and cookies. Growing up we rarely had ANYTHING with walnuts, because my brother was/is deathly allergic to them, along with peanuts and hazelnuts. Every day after school I would go over to my friend’s house and snack on walnuts from a big glass container her mom kept on the countertop, while everyone else snacked on chips and cookies. They thought I was pretty weird. Well that’s probably true (but in a good way!). I still love them and snack on them from MY glass jar (although I keep them in the fridge because I have since learned they go rancid pretty quick!) Walnuts are super high in vitamin A and C, as well as potassium, magnesium, and the omega essential fatty acids. Every single cell, organ, and tissue in our bodies requires a daily supply of “EFAs”. EFAs have been shown to be beneficial to people with all forms of arthritis, skin problems, and migraine headaches, and can reduce cholesterol, lower the risk of stroke and heart attack, lower the risk of some cancers, and improve brain and immune function!
